- 1 cup panko breadcrumbs
- 1/2 cup cornstarch
- 2 large eggs
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha sauce
- Green onions for garnish
Instructions
- 1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- 2. Set up three bowls: one with seasoned cornstarch, another with beaten eggs, and the last filled with panko breadcrumbs mixed with seasonings.
- 3. Cut chicken breasts into bite-sized pieces. Dredge each piece in cornstarch, dip in egg wash, then roll in panko breadcrumbs until fully coated.
- 4. Bake on the prepared sheet for 20-25 minutes or until golden brown and crispy.
- 5. While the chicken bakes, whisk together mayonnaise, sweet chili sauce, and sriracha in a bowl. Adjust spice levels as desired.
- 6. Toss baked chicken in the bang bang sauce until evenly coated. Serve topped with chopped green onions.
