Perfect for casual lunches or intimate dinners, this recipe transforms everyday ingredients into an unforgettable culinary experience that will impress your family and friends alike.

Ingredients

Scale
  • 9 oz fresh cheese-filled ravioli
  • 1 cup cherry tomatoes (halved)
  • 1 cup asparagus (trimmed and cut into 2-inch pieces)
  • 4 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • ¼ cup fresh basil (chopped)
  • ¼ cup fresh parsley (chopped)
  • ¼ cup grated Parmesan cheese
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C). On a baking sheet, toss halved cherry tomatoes with olive oil and salt. Roast for 15 minutes until they burst.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic for 1 minute. Add asparagus and cook until bright green and tender, about 4 minutes.
  3. Boil salted water in a pot. Cook ravioli according to package instructions until they float, then drain, reserving some pasta water.
  4. Combine ravioli with roasted tomatoes and sautéed asparagus in the skillet. If needed, add reserved pasta water for creaminess.
  5. Stir in chopped basil and parsley just before serving. Top with grated Parmesan and enjoy!

Keywords: Swap asparagus for seasonal vegetables like zucchini or broccoli for added variety. Add red pepper flakes for a spicy kick or a squeeze of lemon juice for brightness. To keep leftovers moist when reheating, add a splash of water on the stovetop.
