- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1 cup low-sodium chicken broth
- 1 can cream of mushroom soup
- 2 cloves fresh garlic, minced
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt & pepper to taste
Instructions
- Finely chop the onion and mince the garlic.
- Heat olive oil in a large skillet over medium heat. SautΓ© onions and garlic until golden and fragrant.
- Season chicken breasts with salt and pepper. Sear each side in the skillet for about 5 minutes until golden brown.
- In a bowl, mix cream of mushroom soup with chicken broth and paprika until smooth. Pour over the chicken in the skillet.
- Gently stir in the rice to coat it with the sauce.
- Cover the skillet, reduce heat to low, and simmer for 20-25 minutes until the rice is cooked and has absorbed most of the liquid.
