  • ½ tsp turmeric powder
  • 1 cup full-fat coconut milk

  2. Heat oil in a large skillet over medium heat. Add onions and cook until translucent (about 5 minutes).
  3. Stir in minced garlic and grated ginger; sauté for about 1 minute until fragrant.
  4. Add cumin, coriander, and turmeric; stir well to coat onions. Toast for another minute.
  5. Mix in diced potatoes followed by coconut milk. Cover and simmer for 15-20 minutes until potatoes are tender.
  6. Fold in chopped spinach gently until wilted (about 2-3 minutes). Season with salt and pepper to taste.
