- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 tsp fresh thyme, chopped (or 1 tsp dried thyme)
- 1 lb Yukon gold or red potatoes, diced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 425°F (220°C) and line a baking tray with parchment paper.
- Season chicken breasts with salt and pepper. In a large skillet over medium-high heat, add olive oil and sear the chicken for 6-7 minutes on each side until golden brown. Remove from skillet.
- Lower the heat and sauté minced garlic in the same skillet until fragrant (about 30 seconds). Add heavy cream and chicken broth, stirring until slightly thickened.
- Toss in diced potatoes and thyme, coating well in the sauce. Return the chicken to the skillet.
- Transfer everything to the prepared baking tray and bake for 20-25 minutes until potatoes are fork-tender. Garnish with fresh parsley before serving.
