- 8 oz fettuccine pasta
- 1 lb jumbo shrimp, peeled and deveined
- 1 cup coconut milk (full-fat)
- 3 cloves garlic, minced
- 1 medium sweet onion, chopped
- 1 cup bell peppers (mixed colors), sliced
- 2 tbsp olive oil
- 1 tsp allspice
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot. Add fettuccine and cook until al dente (about 8-10 minutes). Drain and set aside.
- In a skillet over medium heat, add olive oil. Once hot, sauté chopped onions and garlic until fragrant (about 3-4 minutes).
- Stir in sliced bell peppers and cook until softened (about 2-3 minutes).
- Add shrimp to the skillet and cook until they turn pink and opaque (approximately 3-4 minutes).
- Pour in coconut milk along with allspice, thyme, salt, and pepper. Simmer for about 5 minutes until slightly thickened.
- Add cooked pasta to the skillet and toss everything together until well-coated with the sauce.
