  • 8 oz fettuccine pasta
  • 1 lb jumbo shrimp, peeled and deveined
  • 1 cup coconut milk (full-fat)
  • 3 cloves garlic, minced
  • 1 medium sweet onion, chopped
  • 1 cup bell peppers (mixed colors), sliced
  • 2 tbsp olive oil
  • 1 tsp allspice
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Add fettuccine and cook until al dente (about 8-10 minutes). Drain and set aside.
  2. In a skillet over medium heat, add olive oil. Once hot, sauté chopped onions and garlic until fragrant (about 3-4 minutes).
  3. Stir in sliced bell peppers and cook until softened (about 2-3 minutes).
  4. Add shrimp to the skillet and cook until they turn pink and opaque (approximately 3-4 minutes).
  5. Pour in coconut milk along with allspice, thyme, salt, and pepper. Simmer for about 5 minutes until slightly thickened.
  6. Add cooked pasta to the skillet and toss everything together until well-coated with the sauce.
