Ingredients

Scale
  • 2 cups fresh strawberries, hulled and quartered
  • 1/2 cup freshly squeezed lemon juice

  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions

  1. Rinse and hull the strawberries, then slice them into quarters. Sprinkle with 1/4 cup sugar and let sit to release juices.
  2. In a bowl, whisk together lemon juice, 1/4 cup sugar, and gelatin until smooth; let sit for 5 minutes to thicken.
  3. Beat heavy cream with vanilla until soft peaks form. Fold in half of the lemon mixture gently.
  4. In a glass dish or individual cups, layer strawberries at the bottom, spoon whipped cream on top, followed by more strawberries.
  5. Pour remaining lemon mixture over the last strawberry layer and refrigerate for at least 4 hours or overnight to set.
