Instructions
- Preheat your oven to 350°F (175°C).
- Steam sweet potato cubes until fork-tender, about 15-20 minutes.
- Drain and mash sweet potatoes in a mixing bowl; mix in butter until smooth.
- Stir in brown sugar, milk, eggs, cinnamon, and vanilla extract until well combined.
- In another bowl, combine chopped pecans, remaining brown sugar, and melted butter for the topping.
- Pour the sweet potato mixture into a greased baking dish; sprinkle pecan topping evenly over it.
- Bake for 25-30 minutes until bubbly and golden brown.
- Allow to cool slightly before serving.
