  • 34 boneless, skinless chicken breasts (1.52 lbs)
  • 4 cloves fresh garlic, minced
  • 1 large onion, chopped
  • 1 (14.5 oz) can fire-roasted tomatoes
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 cup low-sodium chicken broth
  • 8 corn or flour tortillas
  • 1 avocado, sliced
  • Juice of 1 lime

Instructions

  1. Spray the inside of the crockpot with nonstick spray.
  2. In a skillet, sauté onions and garlic over medium heat until fragrant (about 5 minutes).
  3. Transfer the sautéed mixture to the crockpot. Add chicken breasts, canned tomatoes, chipotle peppers, and chicken broth.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred cooked chicken with two forks and mix it back into the sauce.
  6. Warm tortillas in a skillet or microwave, fill with chicken tinga mixture, top with avocado slices and lime juice.
