- 3–4 boneless, skinless chicken breasts (1.5–2 lbs)
- 4 cloves fresh garlic, minced
- 1 large onion, chopped
- 1 (14.5 oz) can fire-roasted tomatoes
- 2 chipotle peppers in adobo sauce, chopped
- 1 cup low-sodium chicken broth
- 8 corn or flour tortillas
- 1 avocado, sliced
- Juice of 1 lime
Instructions
- Spray the inside of the crockpot with nonstick spray.
- In a skillet, sauté onions and garlic over medium heat until fragrant (about 5 minutes).
- Transfer the sautéed mixture to the crockpot. Add chicken breasts, canned tomatoes, chipotle peppers, and chicken broth.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred cooked chicken with two forks and mix it back into the sauce.
- Warm tortillas in a skillet or microwave, fill with chicken tinga mixture, top with avocado slices and lime juice.
