Ingredients

Scale
  • 4 boneless, skinless chicken breasts (approx. 680g)
  • 3 cups fresh broccoli florets (approx. 240g)
  • 2 tbsp olive oil (30ml)
  • 1 tsp garlic powder (5g)
  • Juice of 1 lemon (approx. 30ml)
  • 1 tsp salt (6g)
  • Β½ tsp pepper (2g)
  • Your favorite sauce, such as teriyaki or soy sauce (optional)

Instructions

  1. Gather all ingredients and chop the broccoli into bite-sized pieces.
  2. In a bowl, mix olive oil, garlic powder, lemon juice, salt, and pepper. Coat the chicken breasts with the marinade and let sit for at least 30 minutes.
  3. Preheat your grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes per side until grill marks appear.
  4. Add the broccoli to the grill during the last few minutes of cooking, grilling until bright green and tender, about 4-5 minutes.
  5. Slice the chicken after resting briefly and arrange over cooked rice or quinoa with grilled broccoli. Drizzle with your favorite sauce before serving.
